Ingredients
- 2 cups dried white beans
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bay leaves
- Salt and pepper to taste

Instructions
- Soak the dried white beans in water overnight.
- Drain and rinse the beans, then place them in a large pot and cover with water.
- Add the chopped onion, minced garlic, bay leaves, salt, and pepper to the pot.
- Bring the pot to a boil, then reduce the heat and simmer for about 1 hour, or until the beans are very tender.
- Once the beans are cooked, remove and discard the bay leaves.
- Using a potato masher or a fork, mash the beans until they reach your desired consistency.
- Stir in the olive oil and adjust the seasoning if needed.
