Mashed Beans With Agoyin Sauce (ewa Agoyin)

Ingredients

  • 2 cups African honey beans
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 red bell peppers, chopped
  • 3 scotch bonnet peppers, chopped
  • 1/2 cup palm oil
  • 1 teaspoon ground crayfish
  • Salt to taste

Instructions

  1. Wash the beans and place in a pot. Add water to cover the beans and cook until soft.
  2. While the beans are cooking, heat the palm oil in a separate pot and sauté the onions, tomatoes, red bell peppers, and scotch bonnet peppers until soft.
  3. Add the ground crayfish and salt to the sauce, and simmer for 10 minutes.
  4. Once the beans are soft, drain any excess water and mash the beans until smooth.
  5. Serve the mashed beans with the spicy Agoyin sauce on top.
