Mashed Beans With Agoyin Sauce (ewa Agoyin)
Mashed Beans with Agoyin Sauce, also known as Ewa Agoyin, is a popular dish in Benin Cuisine. This flavorful and spicy dish is made with mashed African honey beans served with a rich and spicy Agoyin sauce.
Ingredients
- 2 cups African honey beans
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 red bell peppers, chopped
- 3 scotch bonnet peppers, chopped
- 1/2 cup palm oil
- 1 teaspoon ground crayfish
- Salt to taste
Instructions
- Wash the beans and place in a pot. Add water to cover the beans and cook until soft.
- While the beans are cooking, heat the palm oil in a separate pot and sauté the onions, tomatoes, red bell peppers, and scotch bonnet peppers until soft.
- Add the ground crayfish and salt to the sauce, and simmer for 10 minutes.
- Once the beans are soft, drain any excess water and mash the beans until smooth.
- Serve the mashed beans with the spicy Agoyin sauce on top.
