Ingredients

  • 1 pound of button mushrooms, cleaned and stems removed
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a small bowl, mix together the olive oil, minced garlic, ground cumin, paprika, ground coriander, salt, and pepper.
  2. Thread the mushrooms, bell peppers, and red onion onto skewers, alternating the vegetables.
  3. Brush the vegetable skewers with the spice mixture, making sure to coat them evenly.
  4. Heat a grill pan or stovetop grill over medium-high heat. Place the skewers on the grill and cook for 4-5 minutes on each side, or until the vegetables are tender and slightly charred.
