Ingredients

  • 1 large eggplant, cut into chunks
  • 2 zucchinis, sliced
  • 1 large red bell pepper, cut into squares
  • 1 large yellow bell pepper, cut into squares
  • 1 large red onion, cut into wedges
  • 8 cherry tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat the grill to medium-high heat.

  3. Thread the eggplant, zucchini, bell peppers, onion, and cherry tomatoes onto the soaked skewers.
