Ingredients
- 1 large eggplant, cut into chunks
- 2 zucchinis, sliced
- 1 large red bell pepper, cut into squares
- 1 large yellow bell pepper, cut into squares
- 1 large red onion, cut into wedges
- 8 cherry tomatoes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix the olive oil, minced garlic, cumin, paprika, salt, and pepper.
- Thread the eggplant, zucchini, bell peppers, onion, and cherry tomatoes onto the soaked skewers.
- Brush the vegetable skewers with the prepared olive oil mixture.
- Grill the skewers for 10-15 minutes, turning occasionally, until the vegetables are tender and lightly charred.
- Remove from the grill and serve hot.
