Ingredients

  • 16 large prawns, deveined and shells removed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh cilantro
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions

  1. In a bowl, mix the olive oil, cumin, paprika, coriander, salt, and pepper. Add the prawns and toss to coat. Let marinate for 15 minutes.
  2. Preheat the grill to medium-high heat.
  3. In another bowl, combine the softened butter, garlic, parsley, cilantro, lemon zest, and lemon juice. Mix well to make the lemon herb butter.
  4. Grill the prawns for 2-3 minutes per side, until they are pink and opaque.
  5. Remove the prawns from the grill and immediately top each with a spoonful of the lemon herb butter.
