Ingredients
- 1 large breadfruit, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the diced breadfruit to the pot and stir to combine with the onion and garlic.
- Pour in the coconut milk and stir in the curry powder, turmeric, cumin, and paprika. Season with salt and pepper to taste.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the masima lolo kari simmer for 30-35 minutes, or until the breadfruit is tender.
- Once the breadfruit is cooked through and the sauce has thickened, remove the pot from the heat.
- Serve the masima lolo kari hot, garnished with fresh cilantro.
