Ingredients

  • 1 large breadfruit, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the diced breadfruit to the pot and stir to combine with the onion and garlic.
  3. Pour in the coconut milk and stir in the curry powder, turmeric, cumin, and paprika. Season with salt and pepper to taste.
  4. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the masima lolo kari simmer for 30-35 minutes, or until the breadfruit is tender.
  5. Once the breadfruit is cooked through and the sauce has thickened, remove the pot from the heat.
  6. Serve the masima lolo kari hot, garnished with fresh cilantro.
