Ingredients
- 1 cup red lentils
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 tomato, chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 2 tbsp vegetable oil
- Salt to taste
- 4 cups water
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Stir in the chopped tomato, turmeric powder, coriander powder, and red chili powder. Cook for 2-3 minutes until the tomatoes are soft.
- Rinse the red lentils under cold water and add them to the pot. Pour in the water and coconut milk. Season with salt.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are soft and fully cooked.
- Garnish with fresh cilantro before serving.
