Ingredients

  • 1 cup red lentils
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tomato, chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 2 tbsp vegetable oil
  • Salt to taste
  • 4 cups water
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Stir in the chopped tomato, turmeric powder, coriander powder, and red chili powder. Cook for 2-3 minutes until the tomatoes are soft.
  4. Rinse the red lentils under cold water and add them to the pot. Pour in the water and coconut milk. Season with salt.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are soft and fully cooked.
  6. Garnish with fresh cilantro before serving.
