Mastawa (afghan Yogurt Soup)
Mastawa is a traditional Afghan yogurt soup that is popular in Pashtun cuisine. It is a hearty and comforting dish that is perfect for cold weather.
Ingredients
- 1 cup plain yogurt
- 6 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- Salt to taste
- 2 tablespoons vegetable oil
- 1 pound lamb or beef, cut into small pieces
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and diced
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 tablespoons chopped fresh cilantro
Instructions
- In a large bowl, whisk together the yogurt and water until smooth. Set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the garlic, ground turmeric, ground coriander, ground cumin, ground cinnamon, ground cardamom, ground cloves, and salt. Cook for 2 minutes, stirring constantly.
- Add the meat to the pot and cook until browned.
- Pour in the yogurt and water mixture, then add the carrots, potatoes, raisins, and almonds. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the meat is tender and the vegetables are cooked.
- Stir in the chopped cilantro and adjust the seasoning with salt if needed.
- Serve hot, garnished with additional cilantro if desired.
