Mastawa (afghan Yogurt Soup)

Ingredients

  • 1 cup plain yogurt
  • 6 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 pound lamb or beef, cut into small pieces
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a large bowl, whisk together the yogurt and water until smooth. Set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  3. Add the garlic, ground turmeric, ground coriander, ground cumin, ground cinnamon, ground cardamom, ground cloves, and salt. Cook for 2 minutes, stirring constantly.
  4. Add the meat to the pot and cook until browned.
  5. Pour in the yogurt and water mixture, then add the carrots, potatoes, raisins, and almonds. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the meat is tender and the vegetables are cooked.
  6. Stir in the chopped cilantro and adjust the seasoning with salt if needed.
  7. Serve hot, garnished with additional cilantro if desired.
