Ingredients

  • 1 whole matambre (flank steak)
  • 3 hard-boiled eggs, sliced
  • 1 red bell pepper, roasted and sliced
  • 1 cup cooked spinach, drained
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lay the matambre flat on a cutting board and season with salt and pepper.
  3. Layer the sliced hard-boiled eggs, roasted red bell pepper, cooked spinach, Parmesan cheese, and chopped parsley over the matambre.
  4. Roll the matambre tightly and tie it with kitchen twine to secure the filling.
  5. Brush the rolled matambre with olive oil and season with additional salt and pepper.
  6. Place the matambre on a baking sheet and roast in the preheated oven for 1 hour, or until the internal temperature reaches 145°F (63°C).
  7. Remove from the oven and let it rest for 10 minutes before slicing.
