Ingredients
- 1 whole matambre (flank steak)
- 3 hard-boiled eggs, sliced
- 1 red bell pepper, roasted and sliced
- 1 cup cooked spinach, drained
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Lay the matambre flat on a cutting board and season with salt and pepper.
- Layer the sliced hard-boiled eggs, roasted red bell pepper, cooked spinach, Parmesan cheese, and chopped parsley over the matambre.
- Roll the matambre tightly and tie it with kitchen twine to secure the filling.
- Brush the rolled matambre with olive oil and season with additional salt and pepper.
- Place the matambre on a baking sheet and roast in the preheated oven for 1 hour, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let it rest for 10 minutes before slicing.
