Ingredients

  • 4 large red bell peppers, roasted, peeled, seeded, and chopped
  • 6 ripe tomatoes, peeled and chopped
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the chopped tomatoes, roasted peppers, paprika, cumin, sugar, salt, and pepper.
  4. Cook the mixture, stirring occasionally, for 25-30 minutes until the liquid has evaporated and the mixture has thickened.
  5. Remove from heat and let it cool to room temperature before serving.
