Matbucha

Ingredients
- 4 large red bell peppers, roasted, peeled, seeded, and chopped
- 6 ripe tomatoes, peeled and chopped
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chopped tomatoes, roasted peppers, paprika, cumin, sugar, salt, and pepper.
- Cook the mixture, stirring occasionally, for 25-30 minutes until the liquid has evaporated and the mixture has thickened.
- Remove from heat and let it cool to room temperature before serving.
