Matcha Fried Rice (Matcha Chǎofàn)

Matcha Fried Rice (Matcha Chǎofàn)

Ingredients

  • 3 cups cooked white rice
  • 2 tablespoons matcha powder
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup diced tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix the matcha powder with 2 tablespoons of water to form a paste.
  2. Heat the sesame oil in a large pan or wok over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the mixed vegetables and diced tofu to the pan, and stir-fry for 3-4 minutes until the vegetables are tender.
  4. Push the vegetables and tofu to one side of the pan, and add the matcha paste to the empty space. Stir-fry the matcha paste for 1 minute to release its aroma.
  5. Add the cooked white rice to the pan, and toss everything together to combine. Drizzle the soy sauce over the rice, and continue to stir-fry for another 3-4 minutes.
  6. Season the matcha fried rice with salt and pepper to taste. Stir in the chopped green onions, and cook for an additional 1-2 minutes.
  7. Remove the pan from the heat, and serve the matcha chǎofàn hot. Enjoy!
