Matnakash (armenian Yogurt Cake)
Matnakash is a traditional Armenian yogurt cake that is soft, moist, and subtly sweet. It's a delightful treat that pairs perfectly with a cup of coffee or tea.
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup plain yogurt
- 1/2 cup vegetable oil
- 3 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs, then add the yogurt, vegetable oil, and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
