Ingredients

  • 6 green bananas, peeled and sliced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are translucent.
  3. Add the diced tomatoes, turmeric, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
  4. Add the sliced green bananas to the pot and stir to coat them with the tomato and spice mixture.
  5. Pour in the coconut milk and season with salt and pepper. Cover the pot and let the matoke simmer for 20-25 minutes, or until the bananas are tender.
  6. Once the matoke is cooked, remove from heat and serve hot.
