Matoke Madness

Ingredients
- 6 green bananas, peeled and sliced
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are translucent.
- Add the diced tomatoes, turmeric, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
- Add the sliced green bananas to the pot and stir to coat them with the tomato and spice mixture.
- Pour in the coconut milk and season with salt and pepper. Cover the pot and let the matoke simmer for 20-25 minutes, or until the bananas are tender.
- Once the matoke is cooked, remove from heat and serve hot.
