Matsaman Kari, also known as Coconut Curry Shrimp, is a popular dish in Comorian cuisine. This flavorful and aromatic curry is made with succulent shrimp, creamy coconut milk, and a blend of fragrant spices.
Ingredients
- 1 lb (450g) shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 2 tbsp Matsaman curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and garlic, and sauté until fragrant.
- Add the Matsaman curry paste and cook for 1-2 minutes.
- Pour in the coconut milk and chicken broth, then stir to combine.
- Add the sliced red bell pepper, fish sauce, and brown sugar. Simmer for 5 minutes.
- Add the shrimp to the pan and cook for 3-4 minutes until they turn pink and opaque.
- Season with salt and pepper to taste.
- Serve the Matsaman Kari over steamed rice or with crusty bread.
