Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tbsp Matsaman curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and garlic, and sauté until fragrant.
  3. Add the Matsaman curry paste and cook for 1-2 minutes.
  4. Pour in the coconut milk and chicken broth, then stir to combine.
  5. Add the sliced red bell pepper, fish sauce, and brown sugar. Simmer for 5 minutes.
  6. Add the shrimp to the pan and cook for 3-4 minutes until they turn pink and opaque.
  7. Season with salt and pepper to taste.
  8. Serve the Matsaman Kari over steamed rice or with crusty bread.
