Ingredients
- 1 whole chicken, cut into pieces
- 1 small pumpkin, peeled and cubed
- 2 onions, finely chopped
- 3 cloves of garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 cup olive oil
- Salt and pepper to taste
- 2 cups chicken broth
- 1/4 cup chopped fresh cilantro
Instructions
- In a large tagine or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onions and minced garlic, and sauté until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the ground cumin, ginger, cinnamon, turmeric, nutmeg, and cloves, coating the chicken evenly with the spices.
- Add the cubed pumpkin to the pot and season with salt and pepper.
- Pour in the chicken broth and bring the mixture to a simmer.
- Cover the pot and let the tagine simmer for 45-50 minutes, or until the chicken is cooked through and the pumpkin is tender.
- Sprinkle the chopped cilantro over the tagine before serving.
