Mauritanian Chicken And Pumpkin Tagine

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 small pumpkin, peeled and cubed
  • 2 onions, finely chopped
  • 3 cloves of garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large tagine or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until softened.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Stir in the ground cumin, ginger, cinnamon, turmeric, nutmeg, and cloves, coating the chicken evenly with the spices.
  5. Add the cubed pumpkin to the pot and season with salt and pepper.
  6. Pour in the chicken broth and bring the mixture to a simmer.
  7. Cover the pot and let the tagine simmer for 45-50 minutes, or until the chicken is cooked through and the pumpkin is tender.
  8. Sprinkle the chopped cilantro over the tagine before serving.
