Ingredients
- 4 chicken thighs
- 2 sweet potatoes, peeled and cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- Heat some oil in a large pot or tagine over medium heat.
- Add the chicken thighs and brown them on both sides, then remove and set aside.
- Add the onion and garlic to the pot and cook until softened.
- Stir in the ground ginger, cumin, coriander, cinnamon, and cayenne pepper.
- Add the sweet potatoes and chicken broth to the pot.
- Return the chicken thighs to the pot, cover, and simmer for 45 minutes or until the chicken is cooked through and the sweet potatoes are tender.
