Mauritanian Chicken And Sweet Potato Tagine

Ingredients

  • 4 chicken thighs
  • 2 sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat some oil in a large pot or tagine over medium heat.
  3. Add the chicken thighs and brown them on both sides, then remove and set aside.
  4. Add the onion and garlic to the pot and cook until softened.
  5. Stir in the ground ginger, cumin, coriander, cinnamon, and cayenne pepper.
  6. Add the sweet potatoes and chicken broth to the pot.
  7. Return the chicken thighs to the pot, cover, and simmer for 45 minutes or until the chicken is cooked through and the sweet potatoes are tender.
  8. Sprinkle with chopped cilantro before serving.
