Mauritanian Chicken And Vegetable Couscous

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups couscous
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 4 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken pieces over medium heat for 5 minutes.
  2. Add the onion and garlic, and cook for another 3 minutes.
  3. Stir in the cumin, coriander, turmeric, and cayenne pepper, and cook for 1 minute.
  4. Add the carrots, zucchini, bell pepper, and tomatoes to the pot, and cook for 5 minutes.
  5. Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 30 minutes.
  6. Stir in the couscous, cover, and let it sit for 5 minutes.
  7. Fluff the couscous with a fork, and season with salt and pepper. Garnish with fresh cilantro before serving.
