Mauritanian Chicken And Vegetable Couscous

Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups couscous
- 1 onion, chopped
- 2 carrots, sliced
- 1 zucchini, diced
- 1 bell pepper, chopped
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 4 cups chicken broth
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken pieces over medium heat for 5 minutes.
- Add the onion and garlic, and cook for another 3 minutes.
- Stir in the cumin, coriander, turmeric, and cayenne pepper, and cook for 1 minute.
- Add the carrots, zucchini, bell pepper, and tomatoes to the pot, and cook for 5 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 30 minutes.
- Stir in the couscous, cover, and let it sit for 5 minutes.
- Fluff the couscous with a fork, and season with salt and pepper. Garnish with fresh cilantro before serving.
