Ingredients
- 1 1/2 lbs (680g) chicken thighs, boneless and skinless
- 2 cups (400g) basmati rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon saffron threads
- 4 cups (1 liter) chicken broth
- 1/4 cup (60ml) vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the chicken thighs to the pot and cook until browned on all sides.
- Stir in the ground ginger, ground turmeric, and saffron threads, and cook for 1-2 minutes to toast the spices.
- Add the basmati rice to the pot and stir to coat the grains with the aromatic spices.
- Pour in the chicken broth, season with salt and pepper, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the chicken is cooked through.
- Fluff the pilaf with a fork, and let it rest for a few minutes before serving.
