Mauritanian Chicken Pilaf With Saffron

Ingredients

  • 1 1/2 lbs (680g) chicken thighs, boneless and skinless
  • 2 cups (400g) basmati rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon saffron threads
  • 4 cups (1 liter) chicken broth
  • 1/4 cup (60ml) vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the chicken thighs to the pot and cook until browned on all sides.
  3. Stir in the ground ginger, ground turmeric, and saffron threads, and cook for 1-2 minutes to toast the spices.
  4. Add the basmati rice to the pot and stir to coat the grains with the aromatic spices.
  5. Pour in the chicken broth, season with salt and pepper, and bring to a boil.
