Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 cup dried chickpeas, soaked overnight
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 4 cups fish or vegetable broth
- 2 tomatoes, diced
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Heat some oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Stir in the ground cumin, coriander, and turmeric, and cook for another minute to toast the spices.
- Add the soaked chickpeas and broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
- Add the diced tomatoes and fish fillets to the pot. Simmer for an additional 15-20 minutes, or until the fish is cooked through and the chickpeas are tender.
