Mauritanian Fish and Coconut Curry is a flavorful and aromatic dish that combines the delicate taste of fish with the richness of coconut milk and a blend of Mauritanian spices.
Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) coconut milk
- 2 tbsp Mauritanian curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, Mauritanian curry powder, ground cumin, ground coriander, and turmeric. Stir well to combine and cook for 2 minutes.
- Add the sliced red bell pepper and cook for another 2 minutes.
- Pour in the coconut milk and bring to a simmer.
- Gently add the fish fillets to the pot and let them cook in the coconut curry for 8-10 minutes, or until the fish is cooked through.
- Season with salt and pepper to taste.
- Serve the Mauritanian Fish and Coconut Curry hot, garnished with fresh cilantro.
