Mauritanian Fish Tagine With Preserved Lemon

Ingredients

  • 4 fish fillets
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 preserved lemon, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a tagine or large skillet over medium heat.
  2. Add the chopped onion and cook until softened.
  3. Stir in the garlic, cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  4. Add the diced tomatoes and cook for another 5 minutes.
  5. Place the fish fillets on top of the tomato mixture in the tagine.
  6. Arrange the preserved lemon slices on top of the fish.
  7. Season with salt and pepper, then cover and simmer for 20-25 minutes, or until the fish is cooked through.
  8. Sprinkle with chopped cilantro before serving.
