Ingredients
- 1.5 lb lamb, cut into chunks
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 cup dried apricots
- 2 cups chicken broth
- 2 tbsp honey
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large tajine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the ground ginger, cumin, coriander, and cinnamon, and cook for 1-2 minutes until fragrant.
- Pour in the chicken broth and add the dried apricots. Bring to a simmer.
- Reduce the heat to low, cover, and let the tajine simmer for 1.5-2 hours, or until the lamb is tender.
- Stir in the honey and season with salt and pepper to taste.
