Mauritanian Lamb And Chickpea Tagine
Mauritanian Lamb and Chickpea Tagine is a traditional Mauritanian dish that is rich in flavors and spices. This slow-cooked stew is perfect for a hearty and comforting meal, especially during the colder months.
Ingredients
- 1 kg lamb, cut into chunks
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 400g canned chickpeas, drained and rinsed
- 400g canned diced tomatoes
- 500ml chicken or lamb broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large tagine or Dutch oven, heat some oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onions and cook until softened. Add the minced garlic and cook for another minute.
- Stir in the ground cumin, coriander, cinnamon, turmeric, and cayenne pepper. Cook for a few minutes until fragrant.
- Return the browned lamb to the pot. Add the drained chickpeas, diced tomatoes, and chicken or lamb broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender.
- Stir in the chopped cilantro and parsley just before serving.
