Ingredients
- 1 lb beef, cut into cubes
- 2 onions, chopped
- 3 carrots, sliced
- 2 zucchinis, diced
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 2 cups couscous
- 3 cups beef broth
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown on all sides.
- Add the chopped onions and cook until softened.
- Stir in the ground cumin, coriander, turmeric, and cinnamon, and season with salt and pepper.
- Pour in the beef broth and bring to a simmer. Cover and cook for 30 minutes.
- Add the carrots, zucchinis, red bell pepper, and tomatoes to the pot. Simmer for an additional 15 minutes.
- Meanwhile, prepare the couscous according to the package instructions.
