Mauritanian Spiced Chicken Skewers

Ingredients

  • 1.5 lbs chicken breast, cut into cubes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, mix the chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, ground turmeric, cayenne pepper, olive oil, salt, and pepper.
  2. Add the chicken cubes to the spice mixture and toss to coat evenly. Marinate for at least 30 minutes.
  3. Thread the marinated chicken onto the soaked wooden skewers.
  4. Heat a grill pan or stovetop grill over medium-high heat. Cook the skewers for about 6-8 minutes per side, or until the chicken is fully cooked and has a nice char.
  5. Remove the skewers from the heat and let them rest for a few minutes before serving.
