Mauritanian Spiced Lamb And Cauliflower Tagine

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 head cauliflower, cut into florets
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 2 cups chicken or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large tagine or Dutch oven over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove from the tagine and set aside.
  3. In the same tagine, add the chopped onion and cook until softened.
  4. Add the minced garlic, ground cumin, ground coriander, ground cinnamon, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  5. Return the lamb to the tagine and add the cauliflower florets, chopped cilantro, chopped parsley, and chicken or vegetable broth.
  6. Season with salt and pepper, cover, and simmer for 45-50 minutes, or until the lamb is tender and the cauliflower is cooked through.
  7. Serve the Mauritanian Spiced Lamb and Cauliflower Tagine hot, garnished with additional fresh herbs if desired.
