Mauritanian Spiced Lamb And Cauliflower Tagine
This Mauritanian Spiced Lamb and Cauliflower Tagine is a flavorful and aromatic dish that is perfect for a special occasion or a cozy family dinner.
Ingredients
- 1 lb lamb, cut into chunks
- 1 head cauliflower, cut into florets
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 2 cups chicken or vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large tagine or Dutch oven over medium heat.
- Add the lamb chunks and brown on all sides, then remove from the tagine and set aside.
- In the same tagine, add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, ground cinnamon, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the lamb to the tagine and add the cauliflower florets, chopped cilantro, chopped parsley, and chicken or vegetable broth.
- Season with salt and pepper, cover, and simmer for 45-50 minutes, or until the lamb is tender and the cauliflower is cooked through.
- Serve the Mauritanian Spiced Lamb and Cauliflower Tagine hot, garnished with additional fresh herbs if desired.
