Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 2 cups (400g) long-grain white rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 2 tablespoons vegetable oil
- 3 cups (720ml) chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the ground cumin, coriander, turmeric, and cayenne pepper to the pot, and cook for 1-2 minutes until fragrant.
- Add the rice to the pot and stir to coat it with the spices and onions.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- While the rice is cooking, season the shrimp with salt and pepper. In a separate pan, heat a little oil over medium-high heat and cook the shrimp for 2-3 minutes per side until pink and opaque.
- Serve the spiced shrimp over the fragrant rice pilaf and enjoy!
