Mauritanian Spiced Shrimp And Rice Pilaf

Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 cups (400g) long-grain white rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons vegetable oil
  • 3 cups (720ml) chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the ground cumin, coriander, turmeric, and cayenne pepper to the pot, and cook for 1-2 minutes until fragrant.
  3. Add the rice to the pot and stir to coat it with the spices and onions.
  4. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  5. While the rice is cooking, season the shrimp with salt and pepper. In a separate pan, heat a little oil over medium-high heat and cook the shrimp for 2-3 minutes per side until pink and opaque.
