Ingredients
- 1 head of cabbage
- 1 pound ground beef
- 1 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 cups tomato sauce
- 2 cups beef broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes, or until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the softened leaves. Set aside.
- In a large bowl, combine the ground beef, uncooked rice, onion, garlic, cumin, coriander, cinnamon, salt, and pepper. Mix well to combine.
- Place a spoonful of the beef and rice mixture onto each cabbage leaf. Roll the leaves up, tucking in the sides to create a neat roll.
- In a large pot, arrange the stuffed cabbage rolls in a single layer. Pour the tomato sauce and beef broth over the rolls. Cover and simmer over low heat for 1 hour, or until the rice is cooked and the beef is tender.
- Serve the Mauritanian Stuffed Cabbage Rolls with Ground Beef and Rice hot, with a spoonful of the cooking liquid spooned over the top.
