Ingredients
- 4 medium-sized squid, cleaned and tentacles reserved
- 1 cup fragrant rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup chopped parsley
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 lemon, cut into wedges
Instructions
- Start by preparing the stuffing for the squid. In a pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced tomatoes, minced garlic, ground cumin, paprika, turmeric, cayenne pepper, and chopped parsley to the pan. Cook for a few minutes until the tomatoes break down and the mixture becomes fragrant. Season with salt and pepper to taste.
- Stuff the squid with the prepared filling and secure the openings with toothpicks.
- In a separate pot, heat the remaining olive oil and add the fragrant rice. Stir to coat the rice with the oil and then add 2 cups of water. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat a grill pan or skillet over medium-high heat. Grill the stuffed squid and reserved tentacles for 3-4 minutes on each side until the squid is cooked through and has a nice charred exterior.
- Serve the grilled stuffed squid alongside the fragrant rice, garnished with lemon wedges.
