Ingredients

  • 4 medium zucchinis
  • 1 pound ground lamb
  • 1 cup cooked rice

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow cavity.
  3. In a large bowl, mix the ground lamb, cooked rice, onion, garlic, cumin, coriander, cinnamon, salt, and pepper.
  4. Stuff the hollowed-out zucchinis with the lamb and rice mixture.
