Ingredients
- 1 lb chicken, cut into pieces
- 1 cup basmati rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, diced
- 1 carrot, diced
- 1 potato, diced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 6 cups chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the turmeric, cumin, and coriander. Cook for a few minutes to toast the spices.
- Add the tomatoes, carrot, and potato. Cook for another 5 minutes.
- Pour in the chicken broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the basmati rice and continue to simmer for another 20 minutes, or until the rice is cooked and the chicken is tender.
- Season with salt and pepper to taste. Serve the soup hot, garnished with fresh cilantro.
