Ingredients

  • 1 lb chicken, cut into pieces
  • 1 cup basmati rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 1 carrot, diced
  • 1 potato, diced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Stir in the turmeric, cumin, and coriander. Cook for a few minutes to toast the spices.
  4. Add the tomatoes, carrot, and potato. Cook for another 5 minutes.
