Mauritian Chicken Daube

Ingredients

  • 1.5 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 2 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 2 sprigs thyme
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt, pepper, and turmeric.
  2. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  3. Add the seasoned chicken to the pot and brown on all sides.
  4. Stir in the tomatoes, thyme, bay leaves, cinnamon stick, cumin, coriander, and chili powder.
  5. Add the potatoes and carrots to the pot, and pour enough water to cover the chicken and vegetables.
  6. Simmer the daube over low heat for 1 hour, or until the chicken is tender and the sauce has thickened.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the Mauritian Chicken Daube hot with steamed rice or crusty bread.
