Mauritian Chicken Daube

Ingredients
- 1.5 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 2 potatoes, peeled and cubed
- 2 carrots, sliced
- 2 sprigs thyme
- 2 bay leaves
- 1 cinnamon stick
- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, and turmeric.
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the seasoned chicken to the pot and brown on all sides.
- Stir in the tomatoes, thyme, bay leaves, cinnamon stick, cumin, coriander, and chili powder.
- Add the potatoes and carrots to the pot, and pour enough water to cover the chicken and vegetables.
- Simmer the daube over low heat for 1 hour, or until the chicken is tender and the sauce has thickened.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Mauritian Chicken Daube hot with steamed rice or crusty bread.
