Mauritian Chicken Noodles

Ingredients

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 8 oz rice noodles
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 4 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 1/4 cup chopped cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium-high heat. Add the chicken and cook until browned, then remove from the pot and set aside.
  2. In the same pot, add the onion, carrots, and bell pepper. Cook until the vegetables are slightly softened.
  3. Add the garlic and ginger, and cook for another minute until fragrant.
