Ingredients
- 2 boneless, skinless chicken breasts, thinly sliced
- 8 oz rice noodles
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 4 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sesame oil
- 1/4 cup chopped cilantro, for garnish
Instructions
- In a large pot, heat some oil over medium-high heat. Add the chicken and cook until browned, then remove from the pot and set aside.
- In the same pot, add the onion, carrots, and bell pepper. Cook until the vegetables are slightly softened.
