Mauritian Coconut Custard Tart

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup ice water
  • 1 cup coconut milk
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut, toasted

Instructions

  1. In a food processor, pulse the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Slowly add the ice water and pulse until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and transfer it to a 9-inch tart pan. Press the dough into the pan and trim the excess. Prick the bottom of the crust with a fork, then line with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment paper and bake for an additional 5 minutes, or until the crust is golden brown. Let it cool.
  3. In a saucepan, heat the coconut milk and whole milk over medium heat until it just begins to simmer. In a bowl, whisk together the sugar and cornstarch. Add the eggs and vanilla extract, and whisk until smooth. Gradually pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens. Remove from heat and let it cool slightly.
  4. Pour the custard into the cooled tart shell and smooth the top. Sprinkle the toasted coconut over the custard. Bake for 20-25 minutes, or until the custard is set. Let it cool completely before serving.
