Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 2 sprigs of thyme
- 2 bay leaves
- 2 potatoes, peeled and cubed
- 1 cup chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onions, garlic, and ginger. Sauté until the onions are translucent.
- Add the diced tomatoes, thyme, and bay leaves. Cook for a few minutes until the tomatoes soften.
- Return the chicken pieces to the pot. Add the chicken broth and potatoes. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 hour or until the chicken is tender and the sauce has thickened.
