Ingredients
- 500g fresh fish fillets
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 4 tomatoes, chopped
- 2 green chilies, chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the chopped tomatoes, green chilies, turmeric, cumin powder, coriander powder, and salt. Cook for 5 minutes, stirring occasionally.
- Gently place the fish fillets into the pan, spooning the tomato mixture over the fish. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
- Garnish with fresh coriander leaves and serve hot with steamed rice or crusty bread.
