Mauritian Fish Tagine

Ingredients
- 1 lb white fish fillets, such as snapper or grouper
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1/2 cup green olives
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Season the fish fillets with salt and pepper.
- Heat the olive oil in a tagine or large skillet over medium heat.
- Add the onion and garlic, and cook until softened.
- Stir in the cumin, coriander, turmeric, paprika, ginger, cinnamon, and cayenne pepper, and cook for 1 minute.
- Pour in the diced tomatoes and bring to a simmer.
- Add the seasoned fish fillets to the tagine, spooning some of the tomato mixture over the top.
- Scatter the green olives over the fish.
- Cover and simmer for 15-20 minutes, or until the fish is cooked through.
- Sprinkle with chopped cilantro before serving.
