Mauritian Fish Vindaloo

Ingredients

  • 4 fillets of white fish
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1/4 cup white vinegar
  • 2 tablespoons vindaloo paste
  • 1 teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sugar
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Marinate the fish fillets with salt and turmeric. Set aside for 10 minutes.
  2. Heat oil in a large pan over medium heat. Add cumin seeds, mustard seeds, and cinnamon. Cook until the seeds start to pop.
  3. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  4. Add the vindaloo paste and cook for 2 minutes.
  5. Add the tomatoes, vinegar, and sugar. Cook for 5 minutes until the tomatoes are soft.
  6. Gently add the marinated fish fillets to the pan. Cover and cook for 8-10 minutes until the fish is cooked through.
  7. Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
