Ingredients
- 4 fillets of white fish
- 2 onions, chopped
- 4 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1/4 cup white vinegar
- 2 tablespoons vindaloo paste
- 1 teaspoon turmeric
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon cinnamon
- 1/2 teaspoon sugar
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- Marinate the fish fillets with salt and turmeric. Set aside for 10 minutes.
- Heat oil in a large pan over medium heat. Add cumin seeds, mustard seeds, and cinnamon. Cook until the seeds start to pop.
- Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the vindaloo paste and cook for 2 minutes.
- Add the tomatoes, vinegar, and sugar. Cook for 5 minutes until the tomatoes are soft.
- Gently add the marinated fish fillets to the pan. Cover and cook for 8-10 minutes until the fish is cooked through.
- Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
