Mauritian Lamb Biryani
Mauritian Lamb Biryani is a flavorful and aromatic dish that combines tender lamb with fragrant spices and basmati rice. This traditional Mauritian recipe is a perfect blend of Indian and Creole influences, creating a unique and delicious meal.
Ingredients
- 1 lb lamb, cut into chunks
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 2 tbsp biryani masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/4 tsp saffron strands
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 4 cups water
- Salt to taste
- 4 tbsp ghee or clarified butter
Instructions
- Marinate the lamb with yogurt, biryani masala, turmeric, red chili powder, half of the chopped cilantro, half of the chopped mint, and salt. Let it marinate for at least 30 minutes.
- Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat ghee over medium heat. Add the sliced onions and cook until golden brown.
- Add the marinated lamb, garlic, and ginger to the pot. Cook until the lamb is browned.
- Add the chopped tomatoes and cook until they soften.
- Add the drained rice to the pot and stir gently to mix with the lamb and spices.
- Pour in the water, add saffron strands, and bring to a boil. Reduce the heat, cover the pot, and let it simmer for 15-20 minutes until the rice and lamb are cooked through.
- Garnish with the remaining chopped cilantro and mint. Serve hot.
