Mauritian Lamb Curry

Ingredients

  • 1.5 lbs (680g) lamb, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 tablespoon Mauritian curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cinnamon stick
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  3. Add the lamb cubes to the pot and brown on all sides.
  4. Stir in the Mauritian curry powder, ground turmeric, ground cumin, and ground coriander, and cook for 1-2 minutes to toast the spices.
  5. Add the chopped tomatoes and cinnamon stick to the pot, and cook for 5 minutes.
  6. Pour in the coconut milk, season with salt and pepper, and bring to a simmer. Cover and cook for 1 hour, or until the lamb is tender.
  7. Garnish with fresh cilantro before serving.
