Mauritian Lamb Curry

Ingredients
- 1.5 lbs (680g) lamb, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 tablespoon Mauritian curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 cinnamon stick
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the lamb cubes to the pot and brown on all sides.
- Stir in the Mauritian curry powder, ground turmeric, ground cumin, and ground coriander, and cook for 1-2 minutes to toast the spices.
- Add the chopped tomatoes and cinnamon stick to the pot, and cook for 5 minutes.
- Pour in the coconut milk, season with salt and pepper, and bring to a simmer. Cover and cook for 1 hour, or until the lamb is tender.
- Garnish with fresh cilantro before serving.
