Mauritian Lamb Rougaille

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 4 tomatoes, chopped
  • 2 green chilies, chopped
  • 1 teaspoon turmeric
  • 1 tablespoon curry powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until the onions are soft and translucent.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the turmeric, curry powder, cumin seeds, and coriander powder. Cook for 2 minutes to toast the spices.
  4. Add the chopped tomatoes and green chilies to the pot. Season with salt and stir well.
  5. Cover the pot and let the lamb simmer for 45-50 minutes, or until tender.
  6. Garnish with fresh coriander leaves before serving.
