Ingredients
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 green chili, finely chopped
- 1 tsp cumin seeds
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 can (400g) chopped tomatoes
- 1 cup coconut milk
- 1 bunch spinach, washed and chopped
- Salt to taste
- 2 tbsp vegetable oil
- Fresh coriander leaves for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and cook until they start to sizzle.
- Add the chopped onion, garlic, ginger, and green chili. Sauté until the onion is soft and translucent.
- Stir in the ground turmeric, coriander, and garam masala. Cook for 1-2 minutes until fragrant.
- Add the cubed potatoes and chopped tomatoes. Stir well to combine, then cover and cook for 10 minutes.
- Pour in the coconut milk and add the chopped spinach. Season with salt and simmer for another 15-20 minutes until the potatoes are tender and the curry has thickened.
- Garnish with fresh coriander leaves before serving.
