Mauritian Style Beef Stew

Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced

  • 2 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp thyme

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the beef stew meat and brown on all sides. Remove the meat and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Return the beef to the pot and add the tomatoes, carrots, potatoes, beef broth, red wine, bay leaves, thyme, salt, and pepper.
