Mauritian Style Fried Noodles

Ingredients

  • 200g egg noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 100g cabbage, shredded
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Boil the egg noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the sliced onion and minced garlic, and stir-fry for 2 minutes.
  4. Add the julienned carrot, sliced bell pepper, and shredded cabbage. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. Add the cooked noodles to the pan, along with soy sauce, oyster sauce, sugar, salt, and pepper. Toss everything together until well combined and heated through.
  6. Transfer the Mauritian Style Fried Noodles to a serving dish and serve hot.
