Mauritian Style Grilled Chicken

Ingredients

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together soy sauce, brown sugar, garlic, ginger, paprika, cumin, turmeric, cayenne pepper, lime juice, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
