Mauritian Vegetable Curry

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, diced
  • 1 potato, peeled and diced
  • 1 carrot, sliced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and halved
  • 1 can (400ml) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the diced tomatoes and cook until they start to break down.
  3. Stir in the curry powder, turmeric, cumin, and coriander. Cook for 1-2 minutes to toast the spices.
  4. Add the diced potato, carrot, zucchini, and green beans to the pot. Stir to coat the vegetables with the spices.
  5. Pour in the coconut milk and season with salt and black pepper. Bring the curry to a simmer and cook for 25-30 minutes, or until the vegetables are tender.
  6. Garnish the Mauritian Vegetable Curry with fresh cilantro and serve hot with steamed rice or bread.
