Ingredients
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 1 potato, peeled and diced
- 1 carrot, sliced
- 1 zucchini, diced
- 1 cup green beans, trimmed and halved
- 1 can (400ml) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the diced tomatoes and cook until they start to break down.
- Stir in the curry powder, turmeric, cumin, and coriander. Cook for 1-2 minutes to toast the spices.
- Add the diced potato, carrot, zucchini, and green beans to the pot. Stir to coat the vegetables with the spices.
- Pour in the coconut milk and season with salt and black pepper. Bring the curry to a simmer and cook for 25-30 minutes, or until the vegetables are tender.
