Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1 egg
  • 2 tablespoons butter, melted

Instructions

  1. In a large bowl, mix the mashed bananas, flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Repeat with the remaining batter.
  8. Serve the Mbatata warm with honey, syrup, or fresh fruit.
