Ingredients

  • 1 cup dried lentils
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 cups mixed vegetables (such as carrots, bell peppers, and peas)
  • 1 can (14 oz) coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender.
  2. In a separate large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
  4. Add the mixed vegetables to the pot and cook for 5 minutes, stirring occasionally.
  5. Pour in the coconut milk and cooked lentils. Stir to combine and simmer for an additional 5-10 minutes, allowing the flavors to meld together.
  6. Season with salt to taste and garnish with fresh cilantro before serving.
