Ingredients
- 2 lbs cassava, peeled and cut into chunks
- 1 onion, chopped
- 3 tomatoes, diced
- 1 can (14 oz) coconut milk
- 2-3 cups vegetable broth
- 2-3 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the tomatoes, turmeric, cumin, and paprika. Cook for a few minutes until the tomatoes break down.
- Stir in the cassava chunks and pour in the coconut milk and vegetable broth. Season with salt and pepper.
