Mchuzi Wa Njegere (swahili Spiced Chickpea Stew)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional for heat)
  • 2 tomatoes, chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper (if using). Cook for 1-2 minutes until fragrant.
  3. Stir in the chopped tomatoes and cook for another 5 minutes, allowing them to soften.
  4. Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the chickpeas are tender.
  6. Season with salt and pepper to taste. Serve the Mchuzi wa Njegere hot, garnished with fresh cilantro.
